Cheddar Cheese Muffins
Cooking Spray
2 Cups All-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1 tsp paprika
2 tbsp unsalted butter, melted
1 large egg, beaten
1 cup 1% milk
1 1/2 cups of Cheddar cheese, shredded


Instructions

Preheat oven to 375`F and spray a 12 cup muffin tin with cooking spray.

In a large bowl, sift together flour, baking powder, salt and paprika.

Create a well in the flour mixture with a spoon, add melted butter, egg and milk into well, mix until blended. Do not over mix.

Fill each muffin hole with a tablespoon of batter (use 1/2 the batter). Divide cheese evenly over the centre of each muffin, saving enough cheese for a topping. Continue filling muffin tins with batter so that each is about 3/4 full; sprinkle the rest of the cheese on the batter.

Bake for about 22 - 25 minutes or until toothpick comes clean when inserted in the centre, serve warm.

Yields: 12 muffins
