Once again Epicurious' Website saves the day. I had over-ripe banana's and coconut flakes calling out to me. The only thing I did differently was to use brown sugar, I doubled the recipe and used unsweetened coconut. The recipe makes 2 dozen Golden Coconut Banana Muffins. Perfect!!
