Now this meal was made for me by an ex and I figured if he can accomplish this recipe, anyone can!
Linguine with Fresh Tomatoes and Seafood
1/3 Cup Olive Oil
2 Cloves garlic, minced
1/3 Finely chopped red onion
1/2 lb. Shrimp, peeled and deveined
1/2 lb. Scallops
3/4 lb. Linguine
3 Tomatoes, seeded and diced
1/2 cup Chopped fresh Basil
Salt and Pepper
2 Tbsp. Freshly grated Parmesan Cheese
1. In a large skillet, heat oil over medium-high heat, cook garlic, red onion, shrimp and scallops for 2 to 4 minutes or until shrimp are pink and scallops are opaque.
2. Meanwhile, in large pot of boiling salted water, cook linguine until al dente (tender but firm, Or better yet if you throw it against the ceiling and it sticks, its done!). Drain and add to skillet; toss well.
3. Add Tomatoes and basil; toss well. Season with salt and pepper to taste. Sprinkle with Parmesan. Makes 4 servings.
Enjoy!
