The easiest peanut butter cookie recipe ever! Absolutely no flour! Gluten-free Cookies. And they can even be made Egg-free. I've even made this recipe with the egg-substitute (Bought at either a health food store or even the Bulk Barn sells it) for those with an allergy / intolerance to eggs) and it turned out just fine. These cookies are always a huge success with anyone whose tried making them or just enjoyed eating them.
Peanut Butter Cookies
1 Cup Peanut Butter (Chunky or Smooth)
1/2 Cup sugar
1 Egg
Preheat Oven to 325`F
Combine all ingredients. Using a spoon and knife drop cookies onto ungreased cookie sheet. Press down with fork to make a criss-cross pattern. Bake for 9 - 11 minutes. Makes about a dozen.
Tip: Have a glass of warm water handy for dipping for in after pressing down the cookie. Helps the peanut butter not stick to your fork.
Tip #2: If you want a soft cookie bake for a shorter amount of time. But if you like a crunchier cookie bake it longer.
Variation: To make a thumbprint cookie, instead of pressing down with a fork. Roll dough into balls, press down centre with your thumb or a thimble. After they are done baking. You can either put your favourite type of jam in the centre or nutella.
