Gnocchi
This is such a simple and favourite pasta of mine. Mostly potatoes, a little flour, salt and garlic. Its hard to measure this recipe its more about getting a feel of how much you need to use when measuring the ingredients. The general ratio is: 3/4 mashed potatoes to 1/4 Flour. 4 - 6 medium sized potatoes
1 Egg
Flour
1 Tsp Salt
Optional: 2 cloves of garlic, pureed
In a medium-sized pot boil potatoes until soft. Drain the water from the pot. Mash the potatoes making sure there are no lumps. Set aside to cool in the pot.
Once cooled, in the pot. Move the potatoes over to make a space. Add flour to the pot (3/4 mashed potatoes to 1/4 flour ratio). Add in egg, salt and garlic. Using your hands mix ingredients together but don't overmix.
Place a large pot filled with water and bring to a boil on the stove.
Spread flour on counter-top. Using your hands take some of the mixture and roll into a log about 3/4 inch wide. With a knife make uniform cuts about 1/2 inch. Roll between hands to give it a nice shape. Set aside.
When you have all of your Gnocchi shaped. Place into boiling water. Once Gnocchi rises to the top, usually takes a minute or two, remove from water. If it remains any longer it will turn to mush. (speaking from experience, hey I never said I was perfect! It still tasted pretty good.)
